Named for the temperature at which the grapes are picked. The flavor is penetrating and intense, quite grape-y with fresh red and black berry fruit, chocolate, jam (blackberry/mulberry), sugar-ripe fruit, like overripe raspberries and wild strawberries, with notes of dried cranberry, ripe banana and fresh grape juice.
With an almost grape jelly flavor, this vinegar is a fine match for pork, chicken or game birds.
